White Elm Oyster (Hypsizygus ulmarius)

The Culture: Drawn from our proprietary liquid culture, this vigorous White Elm strain is bred to produce massive, tightly clustered bouquets with thick, edible stems.

The Profile: Despite its common name, it is technically not a true Pleurotus oyster mushroom, but it behaves very similarly. It produces beautiful white to pale-cream caps with a highly desirable, firm texture that retains its crunch even after heavy cooking. The flavor is mildly nutty and deeply savory.

History & Benefits: Native to the hardwood forests of North America, it is highly valued by modern cultivators for its distinct culinary texture. Nutritionally dense, it is packed with complex carbohydrates, high-quality proteins, and compounds that support a healthy gut microbiome.

Fruiting Conditions: Highly aggressive colonizer. Thrives on supplemented hardwood sawdust (HWFP) or straw. Prefers warmer fruiting temperatures between 65°F – 75°F.
