Enoki - Gold (Flammulina velutipes)

The Culture: Drawn from our proprietary liquid culture, this resilient Golden Enoki strain has been bred for fast colonization and dense, uniform flushes.

The Profile: A wildly popular culinary mushroom famous for its long, thin stems and tiny caps. It delivers a mild, slightly fruity flavor and a distinct, satisfying crunch that holds up perfectly in hot pots, ramen broths, and delicate stir-fries.

History & Benefits: Known as the "Winter Mushroom" because it naturally fruits in freezing temperatures in the wild. Cultivated Enoki has been a staple in East Asian cuisine and traditional medicine for centuries. It is particularly noted for its high levels of the antioxidant ergothioneine and proflamin, a compound historically studied for its immune-supporting properties.

Fruiting Conditions: Cultivated on supplemented hardwood sawdust (HWFP). Requires a cold shock (around 50°F) to initiate pinning, followed by fruiting temperatures of 55°F – 60°F. Requires high CO2 environments and specialized collars to encourage the long, noodle-like stem growth.
