Mediterranean Oyster (Pleurotus pulmonarius)

The Culture: Drawn from our proprietary liquid culture, this aggressive Mediterranean Oyster strain (often called the Phoenix Oyster) is bred specifically to excel in warmer growing environments.

The Profile: Visually similar to the Pearl Oyster but often featuring a beautiful, subtle lilac or pale-brown hue on the caps. It offers a slightly sweeter, milder flavor profile with a tender, velvety texture that works flawlessly in light summer dishes, pastas, and white wine reductions.

History & Benefits: Native to warmer, subtropical regions, it has become a staple for cultivators dealing with high summer temperatures. It shares the impressive nutritional profile of the Pleurotus genus, boasting high levels of naturally occurring statins, B vitamins, and powerful antioxidants to support cardiovascular health.

Fruiting Conditions: A true warm-weather champion. Thrives on supplemented hardwood (HWFP) or pasteurized straw. Aggressively fruits in warmer temperatures between 70°F – 85°F without the cluster deformation typically seen in cooler-weather strains.
