Maitake (Grifola frondosa)

The Culture: Drawn from our proprietary liquid culture, this Maitake strain is highly resilient and bred to produce beautifully overlapping, feathery clusters.

The Profile: A spectacular dual-purpose mushroom. Culinary enthusiasts revere its rich, earthy, and highly complex flavor profile, accompanied by a delicate, slightly crunchy texture. It is a true culinary showstopper when roasted whole, sautéed in butter, or added to rich broths.

History & Benefits: Known as the "Dancing Mushroom" in Japanese folklore, legend states that foragers would dance with joy upon finding it due to its immense culinary and medicinal value. In the functional wellness space, Maitake is a powerhouse. It is exceptionally rich in D-Fraction, a specific beta-glucan heavily researched for its profound ability to stimulate cellular immune responses and support metabolic health.

Fruiting Conditions: Thrives on supplemented hardwood (HWFP). Requires a longer incubation period compared to Oysters to fully mature the block. Prefers cooler fruiting temperatures between 55°F – 65°F and high humidity.
