Nameko (Pholiota nameko)

The Culture: Drawn from our proprietary liquid culture, this Nameko strain is bred to produce dense, vibrant clusters of beautiful amber caps.

The Profile: A legendary culinary mushroom in Japanese cuisine. Nameko is famous for the naturally glossy, gelatinous coating on its caps. While this sounds unusual to Western cooks, this coating acts as a natural thickener, making it the absolute perfect mushroom for rich miso soups, stews, and heavy sauces. It has an earthy, deeply nutty flavor and a satisfyingly crisp texture.

History & Benefits: Cultivated extensively in Japan, Nameko is revered not just for its culinary utility, but for its health properties. It is naturally high in ergothioneine, a potent antioxidant that helps protect cells from oxidative stress, and is heavily utilized in functional diets to support immune health and reduce inflammation.

Fruiting Conditions: Thrives on supplemented hardwood sawdust (HWFP). Requires cooler fruiting temperatures between 50°F – 60°F and absolutely requires exceptionally high humidity (95%+) to properly form its characteristic glossy caps.
