Enoki - White (Flammulina velutipes)

The Culture: Drawn from our proprietary liquid culture, this classic White Enoki strain is bred for aggressive colonization and the iconic, uniform needle-like flushes.

The Profile: The undisputed staple of East Asian hot pots and soups. Unlike its golden counterpart, this strain is grown in complete darkness to maintain its pure, snowy-white aesthetic. It has a mild, sweet, and slightly fruity flavor with a satisfying crunch that makes it perfect for quick-sear stir-fries and ramen.

History & Benefits: Cultivated for centuries, Enoki is not just a culinary favorite but a functional powerhouse. It is exceptionally rich in antioxidants, specifically ergothioneine, and contains complex polysaccharides that have been historically studied for supporting liver health and bolstering the immune system.

Fruiting Conditions: Grown on supplemented hardwood (HWFP). Requires a cold shock (50°F) to induce pinning, followed by fruiting at 55°F – 60°F. To achieve the iconic white, long-stemmed look, it MUST be grown in high CO2 conditions (using a collar) and in complete, absolute darkness.
