Shiitake S75 (Lentinula edodes)

The Culture: Drawn from our proprietary liquid culture, the S75 strain is a wide-temperature Shiitake variety heavily favored by commercial growers for its massive, reliable flushes.

The Profile: S75 produces gorgeous, thick, meaty caps that often develop the highly prized "Donko" style cracking pattern on top. It boasts a deeply savory, umami-rich, and garlic-adjacent flavor profile. It is the ultimate gourmet choice for heavy broths, stir-fries, and premium restaurant sales.

History & Benefits: Shiitake has been a cornerstone of Asian agriculture and traditional wellness for over a millennium. Nutritionally, it is an absolute powerhouse—rich in lentinan (a potent immune-supporting polysaccharide), essential amino acids, and naturally occurring Vitamin D.

Fruiting Conditions: Grown on supplemented hardwood sawdust (HWFP) or natural oak logs. This specific strain is beloved for its wide fruiting temperature tolerance, performing exceptionally well anywhere between 55°F – 75°F after a thorough browning (incubation) phase.
