Brown Beech (Hypsizygus tessellatus)

The Culture: Drawn from our proprietary liquid culture, this Brown Beech strain has been carefully bred to produce tight, heavy, and visually stunning bouquets.

The Profile: Often sold under the name Buna-shimeji, this mushroom grows in beautiful, dense clusters of petite brown caps. It has a slightly bitter taste when raw that transforms into a deeply savory, buttery, and nutty flavor when cooked. It is a staple in Asian cuisine, excelling in stir-fries, noodle dishes, and seafood pairings.

History & Benefits: Native to East Asia and traditionally found growing on fallen beech trees. It is highly regarded in functional diets for its rich concentration of beta-glucans, which support immune modulation, and its high potassium-to-sodium ratio, which makes it excellent for cardiovascular support.

Fruiting Conditions: Thrives on supplemented hardwood sawdust (HWFP). Requires a slightly longer incubation time to mature the mycelial network. Prefers fruiting temperatures between 60°F – 68°F and high humidity.
