King Oyster (Pleurotus eryngii)

The Culture: Drawn from our proprietary liquid culture, this robust King Oyster strain has been selectively bred to produce exceptionally thick, dense stems and modest caps.

The Profile: Widely considered the premier gourmet Oyster mushroom. Unlike other Oysters, the thick stem is the prized culinary component. It has a firm, meaty, and slightly crunchy texture that holds up exceptionally well to high heat. When sliced into thick "scallops" and pan-seared, it develops a deep, umami-rich, savory flavor.

History & Benefits: Native to the Mediterranean basin, North Africa, and the Middle East, it has a long history in European and Asian cuisines. It contains high levels of antioxidants, including ergothioneine, and is renowned for supporting cardiovascular health and immune function through its naturally rich beta-glucan content.

Fruiting Conditions: Best grown on supplemented hardwood sawdust (HWFP) or masters mix. Prefers a cooler fruiting temperature of 60°F – 68°F. Applying a casing layer can heavily stimulate uniform pin sets.
