Blue Oyster (Pleurotus columbinus)

The Culture: Drawn from our proprietary liquid culture, this aggressive Blue Oyster strain colonizes rapidly and fruits incredibly reliably.

The Profile: A stunning, cool-weather gourmet mushroom that produces beautiful, heavy clusters of steel-blue caps. It offers a mild, savory, and slightly woody flavor with a satisfyingly chewy texture. It is a highly versatile culinary mushroom, excellent in stir-fries, creamy soups, or simply sautéed with garlic and fresh thyme.

History & Benefits: Oyster mushrooms have been foraged globally for centuries, but gained significant prominence in cultivation during World War I as a highly sustainable, fast-growing food source. Nutritionally dense, they are packed with ergothioneine (a potent amino acid and antioxidant), essential B vitamins like niacin and riboflavin, and complex beta-glucans. Regular consumption is widely associated with supporting cardiovascular health, reducing systemic inflammation, and aiding metabolic function.

Fruiting Conditions: Highly versatile, performing exceptionally well on supplemented hardwood (HWFP) or straw. Prefers cooler fruiting temperatures between 55°F – 65°F and high humidity (85-90%).
